I siliconed the rollover sensor but put it back on the holder upside down and found that it didn't work out for me very well, but figured it out when it would start and then die. Does anyone have the wiring diagram for this sensor or know how you can wire around it and do away with the sensor?

Wiring Diagram as you asked. but i dont believe there is a way to eliminate it but i have seen on ebay a few times a plug thing that replaces the sensor.

I've had no issues with the sensor, my preference is to keep it on just in case it flips and somehow "rights" itself, dont' want it walking away from me.
